Before I went vegan, I thought the only “do-able” way to make mashed potatoes was using a box mix. Boy was I wrong! Today, I bring you my creamy, fluffy, garlicky Cilantro Garlic Vegan Mashed Potatoes. Once I realized I could make amazing vegan mashed potatoes in one pot within 30 minutes, it quickly became a weeknight staple. Typically, I serve mine with sautéed onions and steamed broccoli. Because mashed potatoes serve as a great “base”, you can really get creative with side choices and toppings. This recipe pairs perfectly with my Vegan Nacho Cheese Sauce topped with my Tofu Bacon Crumbles.
Potatoes are exactly what my body is craving after a long day (especially after spin class). In addition to being ridiculously satisfying, potatoes are full of fiber, potassium, and vitamin C, which make it one of those heart healthy foods that can significantly reduce the risk of heart disease. These are just a few reasons why potatoes, especially my mashed potatoes, are one of my favorite things to eat.
Enjoy this easy, healthy, and delicious recipe and make it one of your go-to weeknight dinner staples!
- 2 lbs or 4-6 medium sized russet potatoes
- 1 tbsp sea salt
- 1/4 cup olive oil
- 5-6 finely minced garlic cloves
- 1 cup plain unsweetened plant milk (I used almond milk)
- 1/4 cup nutritional yeast
- 1/4 cup of reserved water from cooked potatoes
- 1/2 tsp ground pepper + more to taste
- 1/2 cup roughly chopped fresh cilantro + a little more to top
Fill a large pot with enough water to cover potatoes. Bring to a boil with sea salt. In the meantime, chop potatoes into evenly sized pieces (as pictured) and add to boiling water.
While the potatoes are cooking, heat a saucepan to medium heat with olive oil. Add the garlic and cook until fragrant (30 sec-1 min). Set aside.
Once the potatoes are fork tender (about 20 min), reserve a 1/4 cup of the starchy salt water. Drain the remaining water and add the potatoes back to the pot off the heat.
Combine the garlic olive oil, nutritional yeast, reserved water, milk, and pepper to the potatoes. Using a potato masher, mash until the potatoes are fluffy and smooth. Then stir in the chopped cilantro.*
Top with additional cilantro, serve, and enjoy!
*Taste and add additional salt and pepper if needed.
